After 9 h cultivation in optimized medium, Arabinose isomerase and xylose isomerase activities are 9.4 and 7.24 U/ml, respectively. For optimal growth, the strain requires Tween 80 at 1 g/l and a source of inorganic nitrogen, e.g., ammonium citrate. The bacterium has no requirement for sodium acetate for either growth or production of isomerases. The production rate of enzymes is increased when metal ions are added, primarily manganese Loigolactobacillus bifermentans
