Daucus carota polyamine levels (PAs) in shredded carrots are significantly lower than in the whole roots, due to the elevated activities of diamine oxidase (DAO) and polyamine oxidase (PAO), and of aminoaldehyde dehydrogenase (AMADH) and DcPAO expression level, indicating that the polyamines degradation pathway is activated and more PAs are converted to gamma-aminobutyrate (GABA). Fresh-cut procedure with carrots can induce the accumulation of GABA through activating GABA shunt and polyamines degradation pathway. GABA content in shreds increases drastically at 3 h, reaches its maximum value and then slightly decreases until the end of storage up
