in order to develop a specific analysis for levan in food matrices, a Paenibacillus amylolyticus endolevanase (EC 3.2.1.65) is combined with exoinulinase (EC 3.2.1.80) for levan hydrolysis achieving about 80% hydrolysis yield, method evaluation, and modelling. The levanase preparation exhibits an activity of 1116 U/ml towards levan and no activity towards inulin as determined by the reducing value method

the levansucrase-endolevanase fusion enzyme LevB1SacB or both enzymes (levanase LevB1 and levansucrase SacB) at equimolar concentrations in simultaneous reactions result in an optimal, wide and diverse L-FOS profile, including 6-kestose, levanbiose and blastose among other L-FOS and 1-kestose, which accumulates as by-product of SacB levan synthesis
