Solanum tuberosum amylose + phosphate in presence of lipids, spontaneous formation and precipitation of amylose-lipid complexes. Presence of lipid also leads to lower amylose degrees of polymerization. Lipid chain length defines degree of amylose polymerization, which increases in the order myristic acid, glyceryl monostearate, stearic acid and docosanoic acid. Thermal stability of complexes increases in the same manner ?
